Explore Diocletian's Palace at dawn (5:30–7 am in summer) before the tour groups arrive — the warren of subterranean cellars (€10) is extraordinary in early light and the Peristyle square, usually packed, is empty and eerie. The palace is not a ruin; people live and work inside it.
Take the first catamaran of the day to Hvar town (1.5 hours, ~€15 one-way, book Jadrolinija ferry online) and hire a scooter (€35/day) to reach Milna and Dubovica beaches on the south side — local beaches, clearer water, and no sunbeds.
Walk 30 minutes northwest of the ferry terminal along the Bačvice promenade to the Kaštelet cove — smaller beach, fewer tourists, and you can watch locals play picigin, a uniquely Dalmatian ball game played in shallow water.
Buy Plavac Mali wine directly from the market stalls at Pazar (the open-air market just east of the Golden Gate) on Saturday morning — local producers bring wine, olive oil, and prosciutto directly. You'll pay a quarter of restaurant prices.
