Shin-Shin ramen in Tenjin: this is the ramen that Fukuoka locals choose for a benchmark — tonkotsu broth that's rich but not heavy, thin noodles cooked firm (kata), and a queue that moves fast. Go for lunch; the evening wait is longer.

Dazaifu Tenmangu at dawn: take the 40-minute train to Dazaifu early (the first train arrives before 7am) and walk the cedar-lined approach to the 1,100-year-old shrine in near-complete silence. The plum blossom season (February) is spectacular but it's worth visiting any time of year.

Nakasu Yatai after 9pm: the outdoor food stall city on the island between the Nakagawa and Naka rivers really comes alive after 9pm — choose a stall with a visible regular crowd, sit at the counter (there are usually 8-12 seats), and order ramen plus whatever the person next to you is eating.

Yanagibashi Rengo Market at 6am: the city's wholesale seafood market opens to the public early — buy a paper cup of mentaiko (spicy cod roe, Fukuoka's signature ingredient) from the stall at the entrance and eat it standing while watching the morning fish auction.

Day 1

Hakata Station Area & Canal City

Arrive directly at Hakata Station by subway and get oriented — Canal City Hakata, a vast shopping and entertainment complex 10 minutes' walk from the station, is worth an hour for its theatrical architecture and covered canal. The basement food hall has excellent takeaway mentaiko.

Kushida Shrine & Hakata Machiya Folk Museum

Fukuoka's most important shrine sits in the middle of the old Hakata merchant district — the Oiyama festival float inside is enormous and the shrine museum explains the city's history as Japan's historic gateway to Korea and China. The adjacent folk museum (¥200) shows what Hakata's merchant townhouses looked like.

Nakasu Yatai Evening

Walk to Nakasu island at 9pm and pick a yatai stall — choose by instinct (a full stall with regulars is always the right choice), sit at the counter, and order ramen, gyoza, and something grilled. Budget ¥1,500-2,500 per person with a drink.

Shin-Shin (Tenjin)

The benchmark for Hakata tonkotsu ramen — the broth is milky, the noodles ultra-thin and firm, and the gyoza are some of the best in Japan. Go for the Shin-Shin ramen with extra noodles (kae-dama) at the end.

Day 2

Yanagibashi Market & Breakfast

Start at 7am at Yanagibashi Rengo Market — this small but intense covered market near Nakasu sells the freshest seafood in the city. Grab mentaiko rice balls and grilled fish from the morning stalls.

Dazaifu Tenmangu Shrine

Take the Nishitetsu train to Dazaifu (40 min, ¥410) and visit the plum-blossom shrine that's been a pilgrimage site since 905 AD. The Starbucks on the approach road — designed by Kengo Kuma with interlocking wood — is architecturally significant and worth a coffee stop even if you dislike chains.

Ohori Park

Return to Fukuoka city and spend late afternoon at Ohori Park — a large lake with a Japanese garden and teahouse (¥200) surrounded by paths popular with runners, dog walkers, and anyone who needs a 30-minute reset from urban Japan.

Ichiran (Hakata main branch)

The original Ichiran ramen restaurant — Fukuoka is where the solo-booth concept was invented and this flagship branch has the longest history. The Hakata-style thin noodles here are authentic; order half-cooked (hanjuku) eggs.

Day 3

Fukuoka Castle Ruins & Maizuru Park

The castle keep no longer stands but the stone foundations and turret give a strong sense of the 17th-century structure — Maizuru Park below is planted with hundreds of cherry trees and has one of the best autumn maple sections in Kyushu.

Tenjin Underground City

Fukuoka has one of Japan's most elaborate underground shopping arcades — the Tenjin Chikagai extends under the main boulevard for 590 metres and connects to most of the department stores. Good for last-day souvenir shopping and mentaiko to take home.

Momochi Seaside Park

Take the subway to Nishijin and walk 20 minutes to the reclaimed seafront area — Fukuoka Tower (¥800) offers clear views to Itoshima peninsula, and the Hawks Town area has good waterfront walking at low tide.

Hakata Issou

A cult-status ramen shop that makes small batches of hyper-concentrated tonkotsu daily — the shop sells out and closes when done, usually by early afternoon. Arrive 30 minutes before opening (11:30am) to secure a bowl.
