Humayun's Tomb at 7 am — the UNESCO World Heritage site that inspired the Taj Mahal is almost empty at opening and the morning light on the red sandstone is extraordinary. Hire the government-certified guide (₹200) at the entrance for genuine historical context rather than the hawker version.

Karim's in Old Delhi's Gali Kababian — open since 1913, this is the most direct link to Mughal court cooking in the city. Order the mutton burra (marinated overnight, grilled over charcoal) and the dal Karim, which has been simmering for decades. Go for lunch when it's slightly less hectic.
